 While there is no legal or scientific definition for a "superfood," kimchi is widely considered one due to its exceptional nutritional value and wide-ranging health benefits.   Kimchi is made through a process of lacto-fermentation, which produces Lactobacillus bacteria, the same beneficial microbes found in yogurt. These probiotics help balance the gut microbiome, which is essential for proper digestion, a strong immune system, and even a healthy mood. 


   Rich in vitamin C and antioxidants, kimchi can help strengthen the immune system. A healthy gut microbiome also helps promote a more efficient immune response.
